Another recipe idea from the FitGirlsGuide 28 Day Jump-start.

1. Steam green beans. Boil potatoes. Chill.
2. In a 400F oven, roast bell pepper unit soft but will still hold it’s form.
3. Mash avocado, Greek yogurt, dill, salt, pepper, lime juice. Add to shredded chicken, peas, a cilantro.
4. Spoon mixture into half of a pepper.
5. Serve with a side of low calorie dressing. I used a lite Caesar.
**I did not write down an exact recipe for this. I improvised, and tasted along the way to my liking.
One of my favorite gifts this past Christmas that I received was the Skinnytaste Cookbook. I have yet to make every recipe, but not one has dissapointed me yet. This recipe is so simple, and delicious, that I double it, and freeze them individually for later use. It’s been a life saver, to just grab this out of the freezer, and have dinner ready in 5 minutes (and it’s not processed #WIN).
Grab her cook book, and get this recipe! It is gold.
I even put it on top of a hard corn tortilla to make tostada’s for lunch.
People of the NJ area: PJ’s Pancake House in Princeton
I have been going to this eatery for years, and they never disappoint. While I do love their potato pancakes served with sour cream AND applesauce, my favorite breakfast item they serve is the Eggs Benedict. If you’ve never had Eggs Benedict before, what are you waiting for! Go to PJ’s right now and order them. (yes they are open until midnight)
I’m hungry just thinking about it!
They also serve them with this wonderful potato hash, which has green chilies in it.
